I invented Sweet Chili Sauce Pineapple and Pintos tonight.
Drain a can of pineapple tidbits
and a can of pintos, rinsing the pintos,
dump them in a sauce pan
with 3/4 cup +/- Sweet Chili Sauce
simmer 15-20 min.
stirring occasionally.
The situation called for it
and I complied.
I wasn't trying to force anything
into being,
just seeing what might arise,
and, like that,
out of nowhere,
Chef's Surprise.
I'm retired, and still finding my way--but now, I don't have to pretend that I know what I'm doing.
I retired after 40.5 years as a minister in the Presbyterian Church USA, serving churches in Louisiana, Mississippi and North Carolina. I graduated from Austin Presbyterian Theological Seminary, in Austin, Texas, and Northwestern State University in Natchitoches, Louisiana. My wife, Judy, and I have three daughters and five granddaughters within about twenty minutes from where we live--and are enjoying our retirement as much as we have ever enjoyed anything.

I leave Tex-Mex to others, can’t do hot, overexposed to chili powder when young. On the other hand, it’s a big world, and culinary miracles happen in my kitchen,too. Capers really add zing to egg salad, and horseradish goes well with peanut butter.
